The Stock Area Specific part of the screen shows the stock movements of an item as well as the minimum stock and average cost price of an item. There are three areas of stock movement.
•Period this is the current stock period and shows the current stock position.
•YTD is the year to date stock movements; this is used to give a general idea of the stock movements throughout the year.
•Frozen shows stock when in the middle of a stock take.
Stock Area this selects an area where is stock is stored, one branch can have multiple area such as storeroom and bar.
Min Stock when stock falls below the minimum stock unit it will trigger a reorder. To enter this value you must go to the Ingredients Screen.
Max Stock once the stock is reordered it will order up to the maximum stock Level. It will automatically round up to the nearest whole buying nit. For example if the max stock is 20 bottles it will suggest to order 1 crate of 24 bottles. To enter this value you must go to the Ingredients Screen.
Average Cost is the cost of 1 stock unit. This values is a weighted average. For example buy 10 units @ £1.00 each + 10 units @ £2.00 each equals 20 units divided by £30 = £1.50 unit cost
Note all the fields described above are stock area specific.
Opening Stock shows the opening stock level s. This field is updated from count value of the stock take.
Transfers are the movement of stock between stock areas.
Bought In shows the number of stock units purchased.
Retail Value is the monetary amount every time this stock item is sold ether as a whole item or part of a recipe, it will be updated without the VAT. This is used in calculating the profitability of ingredients items.
Sales are the number of stock units sold ether as whole units or as part of a recipe.
Wastages are items recorded as damaged or unfit for sale. It Is important to record this for profitability calculation’s and to identify when stock is stolen rather than wasted.
Adjust after a stock take the variance is added to this field.
Calculated stock this shows the current stock position.
Note all Value fields with the exception of Retail are the quantity multiplied by the Average cost.
